Oscietra Caviar comes from the Russian sturgeon (Acipenser Gueldenstaedtii). This medium-sized fish can weigh between 20 and 60 kg and takes a minimum of 10 years to produce caviar. The eggs vary in colour and may be beige, amber, light brown and even black. The different grades are based on size 2.7mm to 3mm for classic, 2.8 to 3.2mm for Royal and over 3mm for Imperial. All Oscietra caviar has a good pop, and long, rich, minerally flavour with hints of hazelnut, butter, and oyster
