Calvisius Caviar Tradition Prestige comes from the Pacific White Sturgeon (Acipenser transmontanus) which is native to the North American West coast.
This large fish may grow to 600 kg and can be up to 6 meters long.
The eggs are 2.8mm to 3.2mm in size and tend towards dark grey and black in colour.
They are compact and smooth with an elegant balanced character, reminiscent of the sea with hints of salinity. This caviar finishes with an impressive, clean taste that lingers.
